My husband loves the sausage and lentil soup at Carrabba's so I decided to make it at home. I searched around and found 3 or 4 different recipes...this is a combination of those recipes and a couple of tweaks of my own. It's a great winter time meal. And my husband likes it better than Carrabba's soup!

    hot italian sausage
  • 1 large
    onion, chopped
  • 1
    stalk celery, chopped
  • 2 large
    carrots, chopped
  • 1 small
    zucchini, chopped
  • 8 c
    chicken broth
  • 2 can(s)
    diced tomatoes, undrained (14-1/2 oz cans)
  • 2 clove
    garlic, minced
  • 1 tsp
  • 2 c
    dry green lentils, rinsed
  • 3/4 tsp
    black pepper
  • 1/2 tsp
    red pepper flakes
  • 1/2 tsp
    dried oregano
  • 1/2 tsp
    dried thyme
  • 1/2 tsp
    fennel seeds
  • 1
    bay leaf
  • 1/2 c
    parmesan cheese, freshly grated

How to Make Sausage and Lentil Soup


  1. Brown sausage; drain well.
  2. In a large pot, combine all ingredients except parmesan and bring to a boil.
  3. Reduce heat; cover.
  4. Simmer for about 1 hour or until the lentils are tender. Add water, if necessary, for desired consistency.
  5. Sprinkle with parmesan cheese and serve.
