My husband loves the sausage and lentil soup at Carrabba's so I decided to make it at home. I searched around and found 3 or 4 different recipes...this is a combination of those recipes and a couple of tweaks of my own. It's a great winter time meal. And my husband likes it better than Carrabba's soup!

hot italian sausage
1 large
onion, chopped
stalk celery, chopped
2 large
carrots, chopped
1 small
zucchini, chopped
8 c
chicken broth
2 can(s)
diced tomatoes, undrained (14-1/2 oz cans)
2 clove
garlic, minced
1 tsp
2 c
dry green lentils, rinsed
3/4 tsp
black pepper
1/2 tsp
red pepper flakes
1/2 tsp
dried oregano
1/2 tsp
dried thyme
1/2 tsp
fennel seeds
bay leaf
1/2 c
parmesan cheese, freshly grated

How to Make Sausage and Lentil Soup


  • 1Brown sausage; drain well.
  • 2In a large pot, combine all ingredients except parmesan and bring to a boil.
  • 3Reduce heat; cover.
  • 4Simmer for about 1 hour or until the lentils are tender. Add water, if necessary, for desired consistency.
  • 5Sprinkle with parmesan cheese and serve.
