sausage and lentil soup

My husband loves the sausage and lentil soup at Carrabba's so I decided to make it at home. I searched around and found 3 or 4 different recipes...this is a combination of those recipes and a couple of tweaks of my own. It's a great winter time meal. And my husband likes it better than Carrabba's soup!

Ingredients
- 1 pound hot italian sausage
- 1 large onion, chopped
- 1 - stalk celery, chopped
- 2 large carrots, chopped
- 1 small zucchini, chopped
- 8 cups chicken broth
- 2 cans diced tomatoes, undrained (14-1/2 oz cans)
- 2 cloves garlic, minced
- 1 teaspoon salt
- 2 cups dry green lentils, rinsed
- 3/4 teaspoon black pepper
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon fennel seeds
- 1 - bay leaf
- 1/2 cup parmesan cheese, freshly grated
How To Make sausage and lentil soup

Step 1Brown sausage; drain well.

Step 2In a large pot, combine all ingredients except parmesan and bring to a boil.

Step 3Reduce heat; cover.

Step 4Simmer for about 1 hour or until the lentils are tender. Add water, if necessary, for desired consistency.

Step 5Sprinkle with parmesan cheese and serve.
