sausage and lentil soup

My husband loves the sausage and lentil soup at Carrabba's so I decided to make it at home. I searched around and found 3 or 4 different recipes...this is a combination of those recipes and a couple of tweaks of my own. It's a great winter time meal. And my husband likes it better than Carrabba's soup!

Ingredients

  • 1 pound hot italian sausage
  • 1 large onion, chopped
  • 1 - stalk celery, chopped
  • 2 large carrots, chopped
  • 1 small zucchini, chopped
  • 8 cups chicken broth
  • 2 cans diced tomatoes, undrained (14-1/2 oz cans)
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 2 cups dry green lentils, rinsed
  • 3/4 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon fennel seeds
  • 1 - bay leaf
  • 1/2 cup parmesan cheese, freshly grated

How To Make sausage and lentil soup

  • Step 1
    Brown sausage; drain well.
  • Step 2
    In a large pot, combine all ingredients except parmesan and bring to a boil.
  • Step 3
    Reduce heat; cover.
  • Step 4
    Simmer for about 1 hour or until the lentils are tender. Add water, if necessary, for desired consistency.
  • Step 5
    Sprinkle with parmesan cheese and serve.
