rich's sausage, potato and corn soup

My brother started making this soup several years ago for our church's Christmas potluck. It is simple and easy to make using ingredients most have on hand.

Ingredients

  • 1 pound pork sausage
  • 6-8 - potatoes, peeled and cubed
  • 4 cups corn, fresh or frozen
  • 1 - onion, chopped
  • 4 - chicken bouillon cubes
  • 8 cups water
  • 1 can evaporated milk (small can), optional

How To Make rich's sausage, potato and corn soup

  • Step 1
    Put a liner in your crockpot.
  • Step 2
    Chop onion. Brown onion with pork sausage until sausage is no longer pink, breaking into small pieces as it browns. Drain grease. Add to crockpot.
  • Step 3
    Peel and cube potatoes. Add to crockpot.
  • Step 4
    Add corn to crockpot. I used corn I had frozen this summer.
  • Step 5
    Dissolve bouillon cubes in water and pour over ingredients in crockpot. Give it a stir. Set crockpot to low and let cook at least 8 hours. One half hour before serving, you can pour in the evaporated milk and let heat but do not boil. Serves at least 12 people and freezes well.
