  • 2 Tbsp
    olive oil
  • 1 medium
    onion, diced
  • 1 c
    potato, chopped
  • 1 c
    carrots, julienned
  • 1 large
    red bell pepper, diced
  • 1 tsp
  • 1/2 tsp
  • 1/2 Tbsp
  • 1 tsp
  • 2 c
  • 2 Tbsp
    soy sauce
  • pinch
  • pinch

How to Make Red Bell Pepper Soup


  1. Saute onion in olive oil for 2 minutes.
  2. Add half the carrots, the rest of the vegetables along with the seasonings and continue to saute for 5 minutes.
  3. Add the stock and the soy sauce; bring to a boil and simmer for 20 minutes or until the vegetables are tender.
  4. Puree the soup; return to the pot and add the rest of the carrots.
  5. Return the soup to a boil and simmer for 5 minutes, stirring constantly.
  6. Serve piping hot.
