I learned how to cook this recipe in a cooking class and I have altered it to my preferences.

Ingredients

  • 1/2 pound Italian pork sausage
  • 1/2 pound ground beef
  • 1/2 red onion
  • 3-4 cloves garlic
  • 3-4 teaspoons italian seasoning
  • 1 can tomato paste (6 oz)
  • 1 - small-medium zucchini, sliced
  • 1 - small-medium summer squash, sliced
  • 1 small green bell pepper, sliced
  • 1 slice red bell pepper, sliced
  • 1 - 2 cups chicken broth
  • 3-4 dashes Parmesan cheese, grated
  • 1 box Ditalini pasta (optional)

How To Make ratatouille

  • Step 1
    In a saucepan, brown the sausage and beef along with the onion, garlic, and spices. Drain the grease and set aside
  • Step 2
    In another pan, brown the tomato paste on medium heat for 4-5 minutes. Add broth and whisk into sauce.
  • Step 3
    Stir in meat, chopped vegetables, and more broth if needed. Simmer until veggies are tender.
  • Step 4
    Serve over ditalini pasta or as is. Sprinkle with Parmesan cheese.
