- 1 - clove garlic
- 1 tablespoon olive oil
- 1/4 teaspoon ginger root, minced
- 1 - onion, finely chopped
- 3 cups stock
- 1/4 cup brown sugar
- 1 tablespoon sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon orange zest, grated
- 3 - apples, peeled and chopped
- 2 - squash, frozen, cooked, thawed
How To Make quick sweet and tangy squash soup

Step 1Toast the garlic, if used, in a few drops of olive oil.

Step 2Add the chopped onion, saute in part of the stock.

Step 3Add remainder of stock and rest of ingredients.

Step 4Cook, uncovered, over medium heat until apples have cooked down and soup has reduced to a light creamy consistency.
