Ingredients For pureed carrot soup

2 Tbspbutter

sour cream

1/4 corange juice

1 tspgrated orange rind

salt and pepper

3 cchicken broth

2 ccarrots, finely chopped

1/2 tspcurry powder

1/4 cfinely chopped onion

scallions or chives, finely sliced
How To Make pureed carrot soup

1Heat 2 tablespoons butter in a saucepan.

2Cook onions, covered until soft.

3Stir in curry powder.

4Add carrots and broth; bring to a simmer and cook for 20 minutes or until carrots are very tender.

5Season to taste with salt and pepper.

6Puree in food processor or blender with orange rind and juice.

7Return soup to saucepan (boil down if too thin; add water if too thick); adjust seasoning.

8Portion soup into bowls and garnish with a dab of sour cream and a sprinkling of scallion.
