Ingredients
- 3 tablespoons butter, room temperature
- 1 medium onion, finely chopped
- 5 cups chicken stock
- 1 teaspoon salt
- 1/2 - 1 teaspoons freshly ground pepper
- 16 ounces canned pumpkin
- 1/2 cup heavy cream
- 1/4 cup toasted pumpkin seeds
How To Make pumpkin soup

Step 1In large, heavy sauce pan, melt butter. Add onion and cook over medium heat until onion is soft. Add broth, salt and pepper. Bring to a boil. Add pumpkin, combine thoroughly. Lower heat, cover; simmer for 45 minutes. Add cream and heat through. Serve immediately. Top with toasted pumpkin seeds, if desired.
