I wanted potato soup since it was cold outside. I read quite a few recipes, but nothing jumped out at me, so I "winged" it. My dad said he wasn't very hungry, so " just give me a little". He went back for more,twice! Then he said my stepmom prided herselfon her potato soup, but mine was the best he had ever eaten! High praise, indeed! Even hubby had 2 full bowls & he thinks soup alone doesn't count as a meal! LOL!

Ingredients

  • 7 medium potatoes, peeled & diced
  • 2 cups chicken stock
  • 4-5 cups water
  • 1/2 cup celery, diced small
  • 1 medium onion, diced small
  • 1 teaspoon garlic salt
  • 1/2 teaspoon black pepper
  • 2 cups leftover mashed potatoes
  • 1 package country gravy mix
  • 3 slices cooked bacon, chopped
  • 4 ounces velveeta, diced

How To Make potato soup my way

  • Step 1
    Put potatoes, chicken stock, onions, seasonings in a large pot. Add water to cover potatoes well.
  • Step 2
    Bring to a boil, then reduce heat to medium low. Simmer for about an hour.(Not necessary, can just cook until potatoes are done.) Do not drain.
  • Step 3
    Add 1/2 cups water. Return to a boil. Mix 1/2 cup water with gravy mix & stir into potatoes.
  • Step 4
    Add leftover mashed potatoes & stir to combine. Add cheese & bacon.Reduce heat to simmer.
  • Step 5
    Cook until desired consistency.
