potato soup my way
I wanted potato soup since it was cold outside. I read quite a few recipes, but nothing jumped out at me, so I "winged" it. My dad said he wasn't very hungry, so " just give me a little". He went back for more,twice! Then he said my stepmom prided herselfon her potato soup, but mine was the best he had ever eaten! High praise, indeed! Even hubby had 2 full bowls & he thinks soup alone doesn't count as a meal! LOL!

Ingredients
- 7 medium potatoes, peeled & diced
- 2 cups chicken stock
- 4-5 cups water
- 1/2 cup celery, diced small
- 1 medium onion, diced small
- 1 teaspoon garlic salt
- 1/2 teaspoon black pepper
- 2 cups leftover mashed potatoes
- 1 package country gravy mix
- 3 slices cooked bacon, chopped
- 4 ounces velveeta, diced
How To Make potato soup my way

Step 1Put potatoes, chicken stock, onions, seasonings in a large pot. Add water to cover potatoes well.

Step 2Bring to a boil, then reduce heat to medium low. Simmer for about an hour.(Not necessary, can just cook until potatoes are done.) Do not drain.

Step 3Add 1/2 cups water. Return to a boil. Mix 1/2 cup water with gravy mix & stir into potatoes.

Step 4Add leftover mashed potatoes & stir to combine. Add cheese & bacon.Reduce heat to simmer.

Step 5Cook until desired consistency.
