FOUND THIS RECIPE WHILE GOING THROUGH MY FILES.

Ingredients

  • 1 pound iaho potatoes, peeled & cut into cubes
  • 2 cups water
  • 1/2 cup chopped carrots (can use baby carrots)
  • 1/2 cup chopped celery
  • 1/8 teaspoon pepper (or to taste)
  • 2 teaspoons chicken bouillon granules
  • 1/2 cup chopped onion
  • 4 ounces shredded cheddar (mild or sharp as to your liking)

How To Make potato cheese soup

  • Step 1
    PLACE POTS., WATER, CARROTS, CELERY, GRANULES & PEPPER IN LG PAN. BRING TO BOIL OVER MED. HEAT. REDUCE HEAT & SIMMER 25 MINS. OR UNTIL VEGTS. ARE DONE.
  • Step 2
    PLACE 1/2 OF VEGTS. AT A TIME INTO BLENDER. BLEND UNTIL SMOOTH, THEN RETURN MIXTURE TO PAN.
  • Step 3
    ADD CHEESE, COOK & STIR OVER MED. HEAT UNTIL CHEESE MELTS. SPRINKLE PARSLEY ON TOP WHEN SERVING.
  • Step 4
    SERVES 4
