Ingredients
- 1 pound iaho potatoes, peeled & cut into cubes
- 2 cups water
- 1/2 cup chopped carrots (can use baby carrots)
- 1/2 cup chopped celery
- 1/8 teaspoon pepper (or to taste)
- 2 teaspoons chicken bouillon granules
- 1/2 cup chopped onion
- 4 ounces shredded cheddar (mild or sharp as to your liking)

Step 1PLACE POTS., WATER, CARROTS, CELERY, GRANULES & PEPPER IN LG PAN. BRING TO BOIL OVER MED. HEAT. REDUCE HEAT & SIMMER 25 MINS. OR UNTIL VEGTS. ARE DONE.

Step 2PLACE 1/2 OF VEGTS. AT A TIME INTO BLENDER. BLEND UNTIL SMOOTH, THEN RETURN MIXTURE TO PAN.

Step 3ADD CHEESE, COOK & STIR OVER MED. HEAT UNTIL CHEESE MELTS. SPRINKLE PARSLEY ON TOP WHEN SERVING.
