- 2 - heads garlic
- 32 ounces chicken stock
- 4 large potatoes peeled and cubed
- - salt and pepper to taste
- 1 cup fresh parsley
How To Make potato and roasted garlic soup

Step 1Preheat oven 375 degrees. Place the unpeeled garlic bulbs on a baking sheet.Bake for about 30 minutes.

Step 2Cut potatoes into small chunks. Parboil them in salted boiling water for about 7 minutes and drain.

Step 3Bring chicken stock to a boil. Add the potatoes then squeeze the garlic out of each clove. Cook 5 more minutes. Add the parsley Taste and season with salt.
