Ingredients

  • 2 - heads garlic
  • 32 ounces chicken stock
  • 4 large potatoes peeled and cubed
  • - salt and pepper to taste
  • 1 cup fresh parsley

How To Make potato and roasted garlic soup

  • Step 1
    Preheat oven 375 degrees. Place the unpeeled garlic bulbs on a baking sheet.Bake for about 30 minutes.
  • Step 2
    Cut potatoes into small chunks. Parboil them in salted boiling water for about 7 minutes and drain.
  • Step 3
    Bring chicken stock to a boil. Add the potatoes then squeeze the garlic out of each clove. Cook 5 more minutes. Add the parsley Taste and season with salt.
