I think we all like this because it says "hamburger"! Mom likes this one without the cream and it is one of her favorites.

Ingredients

ground beef

onion
2 medium
carrots
2 stalks
celery
10 small
mushrooms
1 c
chopped bell pepper (yellow or red are the best)
2
bay leaves
1 tsp
spike seasoning
1 tsp
salt
1 tsp
granulated garllic
4 c
arrugula
1/2 c
cream or half & half
4 c
beef broth

How to Make Paulette's Hamburger Soup

Step-by-Step

  • 1Brown hamburger and make sure it is broken up fine. Add onion, carrots, celery, mushrooms, bell pepper and sauté until veggies are softened slightly.
  • 2Add beef broth and spices. Simmer for approx 1 hour.
  • 3Add arrugula and cream about 2 minutes before serving. Just make sure the is cream or that you temper the half & half. Bring up to temp and serve. You don't have to add the cream, it is wonderful with or without it.
