I think we all like this because it says "hamburger"! Mom likes this one without the cream and it is one of her favorites.

Ingredients

  • 1 pound ground beef
  • 1 - onion
  • 2 medium carrots
  • 2 stalks - celery
  • 10 small mushrooms
  • 1 cup chopped bell pepper (yellow or red are the best)
  • 2 - bay leaves
  • 1 teaspoon spike seasoning
  • 1 teaspoon salt
  • 1 teaspoon granulated garllic
  • 4 cups arrugula
  • 1/2 cup cream or half & half
  • 4 cups beef broth

How To Make paulette's hamburger soup

  • Step 1
    Brown hamburger and make sure it is broken up fine. Add onion, carrots, celery, mushrooms, bell pepper and sauté until veggies are softened slightly.
  • Step 2
    Add beef broth and spices. Simmer for approx 1 hour.
  • Step 3
    Add arrugula and cream about 2 minutes before serving. Just make sure the is cream or that you temper the half & half. Bring up to temp and serve. You don't have to add the cream, it is wonderful with or without it.
