I think we all like this because it says "hamburger"! Mom likes this one without the cream and it is one of her favorites.

Ingredients

  • 1 lb
    ground beef
  • 1
    onion
  • 2 medium
    carrots
  • 2 stalks
    celery
  • 10 small
    mushrooms
  • 1 c
    chopped bell pepper (yellow or red are the best)
  • 2
    bay leaves
  • 1 tsp
    spike seasoning
  • 1 tsp
    salt
  • 1 tsp
    granulated garllic
  • 4 c
    arrugula
  • 1/2 c
    cream or half & half
  • 4 c
    beef broth

How to Make Paulette's Hamburger Soup

Step-by-Step

  1. Brown hamburger and make sure it is broken up fine. Add onion, carrots, celery, mushrooms, bell pepper and sauté until veggies are softened slightly.
  2. Add beef broth and spices. Simmer for approx 1 hour.
  3. Add arrugula and cream about 2 minutes before serving. Just make sure the is cream or that you temper the half & half. Bring up to temp and serve. You don't have to add the cream, it is wonderful with or without it.
