I think we all like this because it says "hamburger"! Mom likes this one without the cream and it is one of her favorites.

Ingredients
- 1 pound ground beef
- 1 - onion
- 2 medium carrots
- 2 stalks - celery
- 10 small mushrooms
- 1 cup chopped bell pepper (yellow or red are the best)
- 2 - bay leaves
- 1 teaspoon spike seasoning
- 1 teaspoon salt
- 1 teaspoon granulated garllic
- 4 cups arrugula
- 1/2 cup cream or half & half
- 4 cups beef broth
How To Make paulette's hamburger soup

Step 1Brown hamburger and make sure it is broken up fine. Add onion, carrots, celery, mushrooms, bell pepper and sauté until veggies are softened slightly.

Step 2Add beef broth and spices. Simmer for approx 1 hour.

Step 3Add arrugula and cream about 2 minutes before serving. Just make sure the is cream or that you temper the half & half. Bring up to temp and serve. You don't have to add the cream, it is wonderful with or without it.
