I have made this recipe many times over and cannot even remember where the recipe came from. It's great on a chilly day and clean up is a snap!

Ingredients

  • 1 pound ground beef or turkey
  • 1/2 cup packaged dry bread crumbs
  • 2 tablespoons grated parmesan cheese
  • 1/2 teaspoon italian seasoning
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon olive oil
  • 1 - large onion, chopped
  • 1/2 cup prepared shredded carrots
  • 3 cloves garlic, chopped
  • 6 cups chicken broth
  • 1/4 teaspoon pepper
  • 1 bunch escarole (1 lb) cleaned and cut into 1/2 inch wide strips
  • 1/4 cup parmesan cheese

How To Make one pot wonder

  • Step 1
    In a large bowl mix the ground beef or turkey, bread crumbs, the 2 tbsp of parmesan cheese, italian seasoning, salt and pepper. Shape rounded teaspoons into 1 inch meatballs (about 50).
  • Step 2
    In a large saucepan heat the 1 tbsp. olive oil. Add the onion, carrots and garlic. Saute for 3 minutes.
  • Step 3
    Add the chicken broth and 1/4 tsp pepper. Bring to a boil. Add the meatballs and simmer for 2 minutes.
  • Step 4
    Add the escarole. Simmer, covered for about 10 minutes. Remove from heat and stir in the 1/4 cup of parmesan cheese.
