Ingredients
- 1 pound ground beef or turkey
- 1/2 cup packaged dry bread crumbs
- 2 tablespoons grated parmesan cheese
- 1/2 teaspoon italian seasoning
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 tablespoon olive oil
- 1 - large onion, chopped
- 1/2 cup prepared shredded carrots
- 3 cloves garlic, chopped
- 6 cups chicken broth
- 1/4 teaspoon pepper
- 1 bunch escarole (1 lb) cleaned and cut into 1/2 inch wide strips
- 1/4 cup parmesan cheese
How To Make one pot wonder

Step 1In a large bowl mix the ground beef or turkey, bread crumbs, the 2 tbsp of parmesan cheese, italian seasoning, salt and pepper. Shape rounded teaspoons into 1 inch meatballs (about 50).

Step 2In a large saucepan heat the 1 tbsp. olive oil. Add the onion, carrots and garlic. Saute for 3 minutes.

Step 3Add the chicken broth and 1/4 tsp pepper. Bring to a boil. Add the meatballs and simmer for 2 minutes.

Step 4Add the escarole. Simmer, covered for about 10 minutes. Remove from heat and stir in the 1/4 cup of parmesan cheese.
