I have made this recipe many times over and cannot even remember where the recipe came from. It's great on a chilly day and clean up is a snap!

Ingredients

  • 1 lb
    ground beef or turkey
  • 1/2 c
    packaged dry bread crumbs
  • 2 Tbsp
    grated parmesan cheese
  • 1/2 tsp
    italian seasoning
  • 1/2 tsp
    salt
  • 1/8 tsp
    pepper
  • 1 Tbsp
    olive oil
  • 1
    large onion, chopped
  • 1/2 c
    prepared shredded carrots
  • 3 clove
    garlic, chopped
  • 6 c
    chicken broth
  • 1/4 tsp
    pepper
  • 1 bunch
    escarole (1 lb) cleaned and cut into 1/2 inch wide strips
  • 1/4 c
    parmesan cheese

How to Make One Pot Wonder

Step-by-Step

  1. In a large bowl mix the ground beef or turkey, bread crumbs, the 2 tbsp of parmesan cheese, italian seasoning, salt and pepper. Shape rounded teaspoons into 1 inch meatballs (about 50).
  2. In a large saucepan heat the 1 tbsp. olive oil. Add the onion, carrots and garlic. Saute for 3 minutes.
  3. Add the chicken broth and 1/4 tsp pepper. Bring to a boil. Add the meatballs and simmer for 2 minutes.
  4. Add the escarole. Simmer, covered for about 10 minutes. Remove from heat and stir in the 1/4 cup of parmesan cheese.
