This is one of those soups that while your cooking it and the aroma fills the air, you get a sense of the old world ways of European cooking. Simple but delectable, this soup is sure to please the senses of your guest or family as soon as it hits the table. I like to cook it in the crock pot and let it age for a few days before serving it, but this recipe works equally well in a stock pot on the stove top. Now as far as letting the soup age for a few days, it is my experience that only about half the soup makes it that long, you will be dipping a spoon into it every chance you get!

Ingredients For old world peasant soup

  • 18 oz
    rope sausage
  • 2 stalk
    celery
  • 3 md
    cooking potatoes
  • 2
    carrots
  • 1/2 md
    white onions
  • 7 oz
    canned mushrooms, bits & pieces, drained
  • 1 c
    green beans, frozen or fresh will work
  • 1/2 c
    red wine, dry, full bodied
  • 5 c
    beef stock
  • 1 tsp
    worchestershire sauce
  • 3
    bay leaves
  • 1 tsp
    crushed leaf basil
  • 1/2 tsp
    leaf oregano
  • 1 clove
    garlic, minced
  • ground black pepper to chef's taste

How To Make old world peasant soup

    Brown the sausage, after browning the sausage, remove as much of the grease from the sausage as you can with paper towels. Bias cut the sausage into ¾ inch pieces and place in the crock pot.

    Scrub clean and dice into slightly larger than bite size the potatoes, place in crock pot.

    Take your 2 stalks of Celery and the 2 Carrots, scrub clean removing the undesired portions by trimming the celery and carrots, then rough chop them and place them in the crock pot. Rough chop your ½ of a white onion, toss that right in too!

    Add mushrooms, frozen or fresh green beans, and all other fluids in the ingredient list.

    Add all recommended spices, give it a good stir to mix it all up in the crock pot, cover it and cook

    Crock pots vary in cooking times, mine runs a higher temperature than most. But as a general rule, allow at minimum 7 hours on low setting, or if you need it quicker, then go at least 4 hours on high.

    Try to combat the temptation to take the lid off and check the progress of the cooking too often, this will extend cooking times and will also diminish flavor. However, half way through your desired cook time, give it another good stir, cover and walk away.
