My friend Bethan from Wales sends me recipes all the time and in this batch was a recipe for Nettle Soup. We grow a huge patch of nettle every year and this recipe is perfect. This amazing green is sometimes called "Wonder Weed". Here's a link if you're interested in it. Ingredients

  • 5.3 ounces stinging nettle leaves
  • 2 tablespoons coconut oil
  • 1 large onion, peeled and cut up
  • 2 cloves garlic, peeled and chopped
  • 1 large leek, cleaned and cut thin, discard the green parts
  • 2 large celery stocks, chopped
  • 2 tablespoons quinoa or white rice, such as basmati
  • 1 quart stock, veggie or chicken
  • - sea salt and fresh cracked black pepper to taste
  • 6 tablespoons plain yogurt
  • 1 small bunch ofg chives cut small to garnish the soup (optional)

How To Make nettle soup

  • Step 1
    Pick over the nettle leaves and toss out any stems, they are tough and don't taste too good.
  • Step 2
    Melt the coconut oil in a large pot over med-low heat. Add the onion, leek, celery and garlic and cover and sweat for 10 minutes, stirring a few times throughout the process. You want the veggies soft but not brown.
  • Step 3
    Add the rice and stock and bring up to a simmer and cook for an additional 10 minutes.
  • Step 4
    Add the nettle and stir it in and simmer for an additional 5 minutes. Season with salt and pepper.
  • Step 5
    Puree the soup in a blender in two batches, or use a stick blender and puree the soup right in the pot.
  • Step 6
    Serve in warmed bowls with a large dollop of yogurt on tope. Sprinkle with chives if desired.
