Ingredients

  • 2 pounds fresh mushrooms
  • 1/4 cup onion, minced
  • 1/2 cup celery, finely slivered
  • 6 tablespoons butter
  • 2.5 tablespoons fresh parsley, minced
  • 1 teaspoon salt
  • 1/2 teaspoon paprika
  • 4 tablespoons flour
  • 2 cups broth, beef, chicken, or vegetable

How To Make mushroom soup concentrate

  • Step 1
    Slice mushroom caps and chop stems.
  • Step 2
    Set aside while you saute onion and celery in butter in a large heavy skillet or dutch oven 3 minutes.
  • Step 3
    Add parsley and saute 3 minutes stirring with a wooden spoon.
  • Step 4
    Add mushrooms.
  • Step 5
    Sprinkle on salt, paprika and flour.
  • Step 6
    Stir constantly until well blended.
  • Step 7
    Add broth slowly.
  • Step 8
    Bring to a boil.
  • Step 9
    Lower heat and simmer 10 minutes.
