You can use any kind of steak but I like the filet mignon because you don't need a lot and it is so tender.

Ingredients

  • 1 pound filet mignon or rib eye steak cut into thin strips
  • 2 tablespoons vegetable oil
  • 4 cloves garlic minced
  • 3 tablespoons massaman curry paste
  • 1 can coconut cream or milk
  • 2 cups beef stock
  • 2 tablespoons palm sugar
  • 2 large potatoes peeled and cubed
  • 1 large carrot cut into small cubes
  • 1 tablespoon fish sauce
  • - handful of thai basil chopped

How To Make massaman beef curry

  • Step 1
    Heat a wok or large pot and add the oil. Sear the steak on all sides then remove it to a dish and set aside.
  • Step 2
    Saute the garlic with the curry paste until fragrant. Add the beef stock, coconut cream, and sugar. Bring to a boil. Reduce heat to a simmer and add the potatoes, carrots, and fish sauce. Cook until potatoes are done. Add the Thai Basil and steak.
  • Step 3
    Serve alone or with rice
