This came from the TV Food Network Magazine it is GREAT for a cold day comfort meal.

Ingredients

  • 4 ounces 1 cup elbow macaroni
  • 2 - plum tomatoes slice
  • 4 - 1/2 inch slice baguette
  • - freshly ground pepper
  • - kosher salt
  • 1 - carrot
  • 1 - celery stalk
  • 1/4 cup all purpose flour
  • 3 1/4 cups chicken broth
  • 1 1/4 cups 2% milk
  • 6 ounces cheddar cheese
  • 1/4 cup parmesan cheese
  • 3 - shallots
  • - cooking spray

How To Make mac n cheese soup

  • Step 1
    Position a rack in the upper third of the oven and preheat to 450. Cook macaroni as directed on pkg, drain and set aside.
  • Step 2
    Spray cookie sheet with cooking spray add slice plum tomatoes and slice baguette on it in single layer season with salt and pepper bake until baguette is golden brown about 7 minutes
  • Step 3
    Mince the shallots, carrot, celery in a food processor Mist a sauce pan and cook veggies until softened 4-5 minutes Add the flour and cook stirring for 2 minutes Gradually stir in broth bring to a boil and stir until thicken 6-7 minutes. Remove from heat
  • Step 4
    Add milk, cheeses and macaroni and stir until cheese melts. Season with pepper.
  • Step 5
    Top baguette with tomatoes than garnish the soup.
