lower carb ham, broccoli, and cheese soup
My husband and I have really been trying to watch our carbs for almost a year now. I created this Ham, Broccoli, and Cheese Soup recipe one weekend when we both had the same craving and had ham leftovers.

Ingredients
- 1/2 stick butter
- 1/2 medium onion, chopped
- 1 tablespoon chopped garlic
- 2 bags broccoli, frozen
- 1 cup carrots, shredded
- 1-2 box chicken broth
- 8 ounces cream cheese, softened at room temp
- 1 pound velveeta, cubed
- 16 ounces ham, cubed
- seasonings to taste, as desired
- 1 - 2 keto street taco tortillas
- everything but the bagel seasoning
How To Make lower carb ham, broccoli, and cheese soup

Step 1Melt the butter in a large pot. Then sauté onions for a couple of minutes to soften.

Step 2Add garlic and sauté for an additional minute.

Step 3Add broccoli, carrots,l and desired amount of broth. Continue to cook until the veggies are soft.

Step 4Place room temp cream cheese in a blender with soup of the soup liquid.

Step 5Blend until smooth and add back to the soup pot.

Step 6Stir in the chopped ham and Velveeta.

Step 7Once the Velveeta is completely melted and incorporated and ham is heated back up, it is ready to serve.

Step 8*We serve ours with homemade keto street taco tortilla crackers. Spray keto street taco tortillas lightly with oil and top with everything seasoning. Place in microwave for 65 seconds to crisp up. You may have to "play" with your microwave to master the time required. We do one tortilla at a time.
