louisiana gumbo
I was originally taught this recipe from a friend from Louisiana. Over the years, I have tweaked it to make it my own recipe. One thing to note - it's hard to make a little Gumbo, so this is great to serve guests!

Ingredients
- 1 package smoked sausage, sliced
- 1 pound chicken legs
- 1 pound snow crab legs
- 2 pounds large shrimped, peeled and deveined
- 1 large onion, chopped
- 1 medium green bell pepper, chopped
- 2 stalks celery, chopped
- 2 tablespoons bay leaves, crushed
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons ground thyme
- 2 tablespoons dried basil
- 1 teaspoon dried parsley
- 1 teaspoon garlic powder
- 2 - chicken bouillon cubes
- 2 tablespoons gumbo file
- 1 package okra, frozen
- ROUX
- 1 tablespoon shortening
- 1/4 cup flour
How To Make louisiana gumbo

Step 1Cook chicken, sausage, vegetables (except okra), and seasonings with enough water to cover for one hour.

Step 2Add remaining ingredients, except frozen okra and cook an additional 30 minutes.

Step 3Make roux* of flour & shortening and add to gumbo.

Step 4Add okra and cook additional 5 minutes.

Step 5Serve with white rice.
