loaded potato bacon soup

I wanted a non-cream potato soup that was flavorful and hearty. The bacon, chives and sour cream did the trick. Even my husband, who dislikes any sort of potato soup, thought it was delicious! You could add cheese if you like, but without it, the bacon and chive flavors really come through.

Ingredients
- 4 - medium potatoes, peeled and cubed
- 1/2 - onion, chopped
- 4 cups chicken broth
- 2 tablespoons oil or butter
- 1 stick celery
- 4 slices bacon, cooked and crumbled
- 1/2 cup sour cream
- 2 cloves minced garlic
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 6-8 sprigs fresh chives
How To Make loaded potato bacon soup

Step 1Heat oil in large saucepan on medium heat. Add onions, potatoes, garlic and celery. Cook until onions are transparent.

Step 2Add chicken broth, salt and pepper. Cover and simmer on low until potatoes are soft. (1 hour or so.) Mash coarsely with potato masher. Continue heating uncovered until smooth and thick.

Step 3Fill serving bowls 1/2 full of soup. Add 2 T bacon and 2-3 T sour cream to each bowl and stir. Snip chives to garnish.
