Loaded Potato Bacon Soup
You could add cheese if you like, but without it, the bacon and chive flavors really come through.

4medium potatoes, peeled and cubed
4 cchicken broth
2 Tbspoil or butter
4 slicebacon, cooked and crumbled
1/2 csour cream
2 cloveminced garlic
6-8 sprig(s)fresh chives
How to Make Loaded Potato Bacon Soup
- Heat oil in large saucepan on medium heat. Add onions, potatoes, garlic and celery. Cook until onions are transparent.
- Add chicken broth, salt and pepper. Cover and simmer on low until potatoes are soft. (1 hour or so.) Mash coarsely with potato masher. Continue heating uncovered until smooth and thick.
- Fill serving bowls 1/2 full of soup. Add 2 T bacon and 2-3 T sour cream to each bowl and stir. Snip chives to garnish.
