This was given to me by a co-worker. I used a Vidalia Onion instead of the Green Onion. It is a thick, tasty soup.

  • 4 large
    baked potatoes
  • 2/3 c
  • 2/3 c
  • 1 c
    sour cream
  • 4 oz
    velveeta cheese
  • 6 c
  • 4
    green onions
  • 1 pkg
    real bacon bits
  • 2 c
    chedder cheese
  • 2 tsp
  • 1 tsp

How to Make Loaded Baked Potato Soup


  1. Melt Butter & Flour in a large pan.
  2. Once Butter & Flour are melted, Slowly add Milk. Keep Stirring until thick & bubbly.
  3. Take off Stove. Add Velveeta Cheese, insides of Baked Potatos. I dice one baked potato and add it with the skin to the soup, Chedder Cheese, Green Onions, Bacon Bits and Sour Cream.
  4. Season with Salt & Pepper. Place back on Stove to make sure all cheese is melted. You may have to add up to a cup more of milk.
  5. Place in slow cooker on low. ENJOY!
