Ingredients
- 1 tablespoon olive oil
- 12 ounces Lion's Mane mushrooms, cut into bite size pieces
- 3 scallions, chopped
- 1 tablespoon garlic, minced
- 6 cups mushroom or chicken stock
- 3 tablespoons red Miso paste
- 1/2 cup fresh cilantro chopped
- 3 ounces vermicelli rice noodles
- chili crisp or chili oil, for garnish
How To Make lion's mane mushroom soup

Step 1In a medium saucepan, add the olive oil, mushrooms, scallions, and garlic. Sauté 6 minutes. Add the stock and miso. Cook until the miso has dissolved.

Step 2Add the noodles and cook about 5 minutes. Throw in the cilantro and add chili crisp or chili oil according to taste.
