Ingredients For lion's mane mushroom soup

  • 1 Tbsp
    olive oil
  • 12 oz
    Lion's Mane mushrooms, cut into bite size pieces
  • 3
    scallions, chopped
  • 1 Tbsp
    garlic, minced
  • 6 c
    mushroom or chicken stock
  • 3 Tbsp
    red Miso paste
  • 1/2 c
    fresh cilantro chopped
  • 3 oz
    vermicelli rice noodles
  • chili crisp or chili oil, for garnish

How To Make lion's mane mushroom soup

  • 1
    In a medium saucepan, add the olive oil, mushrooms, scallions, and garlic. Sauté 6 minutes. Add the stock and miso. Cook until the miso has dissolved.

    Add the noodles and cook about 5 minutes. Throw in the cilantro and add chili crisp or chili oil according to taste.
