Ingredients

  • 1 tablespoon olive oil
  • 12 ounces Lion's Mane mushrooms, cut into bite size pieces
  • 3 scallions, chopped
  • 1 tablespoon garlic, minced
  • 6 cups mushroom or chicken stock
  • 3 tablespoons red Miso paste
  • 1/2 cup fresh cilantro chopped
  • 3 ounces vermicelli rice noodles
  • chili crisp or chili oil, for garnish

How To Make lion's mane mushroom soup

  • Step 1
    In a medium saucepan, add the olive oil, mushrooms, scallions, and garlic. Sauté 6 minutes. Add the stock and miso. Cook until the miso has dissolved.
  • Step 2
    Add the noodles and cook about 5 minutes. Throw in the cilantro and add chili crisp or chili oil according to taste.
