linguica and kale soup

My family is French-Canadian and my ex-husband's is Portuguese (from the Azores). We jokingly tell our children they are "French-u-guese" because of their mixed heritage. I created this soup as a combination of our two cultural backgrounds... enjoy!

Ingredients
- 1 bunch scallions, chopped
- 2 tablespoons butter
- 2 cups water
- 2 - chicken bouillon cubes
- 2 cups potatoes, diced
- 2 1/2 cups milk or cream
- 2 tablespoons flour
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 package linguica, cut into small pieces
- 1 bunch fresh kale, chopped
- 1 teaspoon cilantro
- 1 teaspoon paprika
- 2 tablespoons garlic, minced
How To Make linguica and kale soup

Step 1Cook scallions in fat with garlic until tender.

Step 2Add water, bouillon cubes, linguica, and kale. Boil gently, covered until vegetables are tender.

Step 3In a separate pot, boil your diced potatoes until tender.

Step 4In a medium bowl, stir a little of the milk into the flour until the mixture is smooth. Add the remaining milk, salt, pepper, cilantro, and paprika.

Step 5Add the milk mixture to the soup, stirring continuously.

Step 6Simmer, stirring constantly to prevent sticking and lumps, until the soup is slightly thickened.

Step 7Add the cooked potatoes to the thickened soup and simmer 10 minutes, stirring occasionally to prevent sticking or scalding.
