My family is French-Canadian and my ex-husband's is Portuguese (from the Azores). We jokingly tell our children they are "French-u-guese" because of their mixed heritage. I created this soup as a combination of our two cultural backgrounds... enjoy!

  • 1 bunch
    scallions, chopped
  • 2 Tbsp
  • 2 c
  • 2
    chicken bouillon cubes
  • 2 c
    potatoes, diced
  • 2 1/2 c
    milk or cream
  • 2 Tbsp
  • 1 tsp
  • 1 tsp
  • 1 pkg
    linguica, cut into small pieces
  • 1 bunch
    fresh kale, chopped
  • 1 tsp
  • 1 tsp
  • 2 Tbsp
    garlic, minced

How to Make Linguica and Kale Soup


  1. Cook scallions in fat with garlic until tender.
  2. Add water, bouillon cubes, linguica, and kale. Boil gently, covered until vegetables are tender.
  3. In a separate pot, boil your diced potatoes until tender.
  4. In a medium bowl, stir a little of the milk into the flour until the mixture is smooth. Add the remaining milk, salt, pepper, cilantro, and paprika.
  5. Add the milk mixture to the soup, stirring continuously.
  6. Simmer, stirring constantly to prevent sticking and lumps, until the soup is slightly thickened.
  7. Add the cooked potatoes to the thickened soup and simmer 10 minutes, stirring occasionally to prevent sticking or scalding.
