Ingredients
- 2 slices bacon, chopped
- 3 - medium onions, chopped
- 1.5 quarts beef stock
- 2 cups lentils, dry
- 1 cup carrots, chopped
- 1 - bay leaf
- 1/4 teaspoon thyme
- 2 pounds kielbasa, sliced thinly, divided
- - salt and pepper to taste
How To Make lentil kielbasa stew

Step 1Fry bacon and onion in skillet.

Step 2Discard drippings (or store in your cherished drippings jar).

Step 3Place all ingredients except for 1/2 pound of the kielbasa into a large stockpot.

Step 4Bring to a boil and simmer for about 1 hour.

Step 5Add remaining keilbasa and cook 10 minutes more.

Step 6Season to taste.
