Ingredients
- 1 large egg
- 1 1/2 teaspoons olive oil
- 1 tablespoon finely diced onion
- 1 - 2 boneless skinless chicken breast, cubed (3 - 4 oz each)
- 1/2 cup jarred sliced mushrooms
- 1/2 can sliced water chestnuts (about 1/2 cup), drained and cut in half if large
- 1/3 cup peeled carrot ribbons, thin ribbons
- 1 1/2 tablespoons soy sauce (to taste)
- 1 package chicken instant ramen, noodles + seasoning packet (3 oz, I used Maruchan brand)
- optional garnish: sliced green onions, sesame seeds, chili oil, or cilantro
How To Make lazy day fancy chicken ramen

Step 1Bring a small pot of water to a boil.

Step 2Add egg and cook 9 minutes for soft-boiled, 11–12 minutes for fully hard-boiled. Bring a small pot of water to a boil.

Step 3Shock in ice water, peel, and halve. Set aside.

Step 4Heat 1–2 Tbsp olive oil in a large skillet or wok over medium-high heat.

Step 5Add diced onion and cook 1 minute until fragrant.

Step 6Add chicken pieces and stir-fry 3–4 minutes until nearly cooked through.

Step 7Toss in the drained mushrooms and water chestnuts. Stir-fry 2 minutes until mushrooms are golden.

Step 8Add carrot ribbons last (they only need 30–60 seconds to soften slightly while staying crisp-tender).

Step 9Drizzle 1 1/2 Tbsp soy sauce over the entire pan (start with 1 Tbsp and adjust). Stir everything together for 30 seconds so the soy lightly glazes the chicken and veggies.

Step 10Turn off heat and set aside.

Step 11Boil 2 cups of water (or the amount suggested on your ramen package). Add the noodles and cook 2–3 minutes until just tender. In the last 30 seconds, stir in the entire Manchurian seasoning packet (this gives maximum flavor).

Step 12Place the hot noodles and a good amount of the broth into a deep bowl.

Step 13Top with the soy-glazed chicken, mushrooms, water chestnuts, and carrot ribbons.

Step 14Nestle the halved egg on top.

Step 15Finish with green onions, sesame seeds, and a drizzle of chili oil if you like heat. Also, feel free to replace the vegetables with ones you like better, just keep it at about 1 1/3 to 1 1/2 cups of vegetables. Some suggestions are bean sprouts, bamboo shoots, pea pods, broccoli, green or red peppers, Chinese cabbage, and baby corn.
