Ingredients For kimchi shrimp noodle soup

  • 8 oz
    rice noodles
  • 2 Tbsp
    olive oil
  • 1 lb
    shrimp, peeled and deviened
  • 6
    scallions, chopped
  • 2
    inch piece of ginger, grated
  • 4 clove
    garlic, minced
  • 1 c
    Kimchi, plus 1/4 cup of the juice
  • 6 c
    seafood or chicken stock
  • 1/4 c
    soy sauce
  • 1/3 c
    brown sugar
  • 2 tsp
    Korean chili flakes
  • fresh cilantro, for garnish

How To Make kimchi shrimp noodle soup

  • 1
    Cook the noodles according to package directions. Drain and set aside.
  • 2
    Add the oil to a large pot. Add the scallion, ginger, and garlic and cook 2 minutes.
  • 3
    Add the shrimp and cook 1 minute. Add the Kimchi and juice, stock, soy sauce, brown sugar, and chili flakes.
  • 4
    Add the noodles and simmer 5 minutes. Serve garnished with cilantro.
