Ingredients
- 8 ounces rice noodles
- 2 tablespoons olive oil
- 1 pound shrimp, peeled and deviened
- 6 scallions, chopped
- 2 inch piece of ginger, grated
- 4 cloves garlic, minced
- 1 cup Kimchi, plus 1/4 cup of the juice
- 6 cups seafood or chicken stock
- 1/4 cup soy sauce
- 1/3 cup brown sugar
- 2 teaspoons Korean chili flakes
- fresh cilantro, for garnish
How To Make kimchi shrimp noodle soup

Step 1Cook the noodles according to package directions. Drain and set aside.

Step 2Add the oil to a large pot. Add the scallion, ginger, and garlic and cook 2 minutes.

Step 3Add the shrimp and cook 1 minute. Add the Kimchi and juice, stock, soy sauce, brown sugar, and chili flakes.

Step 4Add the noodles and simmer 5 minutes. Serve garnished with cilantro.
