Ingredients For kimchi shrimp noodle soup

8 ozrice noodles

2 Tbspolive oil

1 lbshrimp, peeled and deviened

6scallions, chopped

2inch piece of ginger, grated

4 clovegarlic, minced

1 cKimchi, plus 1/4 cup of the juice

6 cseafood or chicken stock
-
1/4 csoy sauce
-
1/3 cbrown sugar
-
2 tspKorean chili flakes
-
fresh cilantro, for garnish
How To Make kimchi shrimp noodle soup

1Cook the noodles according to package directions. Drain and set aside.

2Add the oil to a large pot. Add the scallion, ginger, and garlic and cook 2 minutes.

3Add the shrimp and cook 1 minute. Add the Kimchi and juice, stock, soy sauce, brown sugar, and chili flakes.

4Add the noodles and simmer 5 minutes. Serve garnished with cilantro.
