kielbasa vegetable soup
Kielbasa - it's a staple at our house. There are a lot of ways to use it, and they are all delicious. This soup is comfort food, and it was born from leftovers the first time we made it. It's fast, warm, hearty, and very tasty. Serve it alone or with a small green salad. Adding some biscuits is a bonus!

Ingredients
- 1/2 of a beef kielbasa sliced into small bite size pieces
- 1 tablespoon butter
- 1/2 cup yellow or white onion, chopped
- 1 stalk celery, thinly sliced
- 1 teaspoon minced garlic, more to taste
- 2 cups beef or vegetable broth
- 1 - 2 cups potatoes, peeled and small dice
- 1 carrot, thinly sliced or diced
- 1/2 cup whole kernel corn
- 1/4 cup cooked green beans, chopped
- 1/2 teaspoon Italian seasoning
- 7 1/2 ounces canned navy or other white bean, drained and rinsed
- 1/2 cup milk or half and half
- 1/3 cup shredded cheddar cheese, sharp or medium
- - snipped chives, for garnish
- salt and pepper, to taste at serving time
How To Make kielbasa vegetable soup

Step 1In a large pot, sauté the sliced kielbasa over medium heat until browned. Remove and set aside.

Step 2In the same pot, add the butter, chopped onion, celery, and garlic. Sauté until the onion is translucent.

Step 3Add the beef broth, remaining vegetables, and seasonings. Bring to a boil, then reduce heat to a simmer.

Step 4Cook for about 15-20 minutes or until the potatoes and vegetables are tender.

Step 5Stir in the browned kielbasa and beans then cook for another 5 minutes.

Step 6Add the milk and cheese stirring until combined. Serve hot, garnished with snipped chives.
