This is a gumbo that I make, that's catered to our personal tastes. It's more of a Cajun Gumbo, mostly because it's spicier, and uses sausage. I do not use okra (i love it, hubby doesn't), and add other veggies, most people don't

Ingredients
- 1 - onion, chopped
- 1 - bell pepper, chopped
- 3 - stalks celery, chopped
- 5 - carrots, cut into 4 inch "fingers"
- 6 - new potatoes, quartered
- 1 can baby corn, drained
- 6 cups water
- 2 cups rice
- - cajun seasoning to taste
- 1 pound sausage, cut into quarters
- 1 small bag of frozen broccoli flourets
- - file' to taste
How To Make jenn's hearty gumbo

Step 1cut sausage into quarters, bite sized pieces, and brown in a stock pot on med high heat.

Step 2Add onions, bell peppers, and celery, cook until onions are clear

Step 3Add the rest of the ingredients, including the rice. You can add a bit more water if you see the water has evaporated too much.

Step 4Serve with extra cooked rice, and hot french bread.
