This is a gumbo that I make, that's catered to our personal tastes. It's more of a Cajun Gumbo, mostly because it's spicier, and uses sausage. I do not use okra (i love it, hubby doesn't), and add other veggies, most people don't

Ingredients

  • 1 - onion, chopped
  • 1 - bell pepper, chopped
  • 3 - stalks celery, chopped
  • 5 - carrots, cut into 4 inch "fingers"
  • 6 - new potatoes, quartered
  • 1 can baby corn, drained
  • 6 cups water
  • 2 cups rice
  • - cajun seasoning to taste
  • 1 pound sausage, cut into quarters
  • 1 small bag of frozen broccoli flourets
  • - file' to taste

How To Make jenn's hearty gumbo

  • Step 1
    cut sausage into quarters, bite sized pieces, and brown in a stock pot on med high heat.
  • Step 2
    Add onions, bell peppers, and celery, cook until onions are clear
  • Step 3
    Add the rest of the ingredients, including the rice. You can add a bit more water if you see the water has evaporated too much.
  • Step 4
    Serve with extra cooked rice, and hot french bread.
