You can find powdered Dashi at Asian markets or dried bonito flakes to make the Dashi stock. Amazon carries them also.

Ingredients

  • BROTH
  • 4 cups dashi stock
  • 1/4 cup soy sauce
  • 2 tablespoons sugar
  • 2 tablespoons mirin
  • ASSEMBLY
  • 8 ounces udon noodles cooked according to directions
  • 1/4 pound shrimp peeled and deveined
  • 8 ounces shiitake mushrooms stemmed and thinly sliced
  • 3 - scallions sliced
  • 4 large eggs

How To Make japanese shrimp noodle bowl

  • Step 1
    Combine all the ingredients for the broth in a pot and bring to a boil. Remove from heat and reserve.
  • Step 2
    In a large pot place the cooked Udon noodles. Top with the shrimp scallions and mushrooms. Pour the broth over top and cover the pot. Bring to a simmer and simmer 4 minutes.
  • Step 3
    Crack the 4 eggs in different spots in the pot. Replace the lid and simmer about 4 more minutes. Serve immediately.
