Ingredients
- BROTH
- 4 cups dashi stock
- 1/4 cup soy sauce
- 2 tablespoons sugar
- 2 tablespoons mirin
- ASSEMBLY
- 8 ounces udon noodles cooked according to directions
- 1/4 pound shrimp peeled and deveined
- 8 ounces shiitake mushrooms stemmed and thinly sliced
- 3 - scallions sliced
- 4 large eggs

Step 1Combine all the ingredients for the broth in a pot and bring to a boil. Remove from heat and reserve.

Step 2In a large pot place the cooked Udon noodles. Top with the shrimp scallions and mushrooms. Pour the broth over top and cover the pot. Bring to a simmer and simmer 4 minutes.

Step 3Crack the 4 eggs in different spots in the pot. Replace the lid and simmer about 4 more minutes. Serve immediately.
