This is a nice brothy soup, I had this soup at a local Japanese resturant .

Ingredients

  • 3 cups beef broth
  • 7 cups chicken broth
  • 1 large carrot
  • 2 - garlic cloves crushed
  • 1 - mushroom sliced thinly
  • 1 tablespoon green onions sliced diagonally(just the green part of the onion)

How To Make japanese mushroom and onion soup

  • Step 1
    Combine beef and chicken stock in pot.
  • Step 2
    add carrot, onion and garlic
  • Step 3
    Bring to a boil, lower heat and simmer for 30 minutes.
  • Step 4
    Discard the carrot, onion and galric and strain the soup through cheesecloth.
  • Step 5
    place a small amount of each of the green onions, mushrooms in serving bowls and ladle the broth over them. Serve.
