jalapeno sweet potato soup

This recipe was recieved from a community named Homestead Heritage near Waco, Texas. They use only natural and homegrown ingredients including all their spices. This is best served on a cool fall afternoon with fresh homemade bread, but can be enjoyed anytime. A bit spicy but oh so yummy. Haven't met anyone who doesn't like it. Try it, you will like it too!

Ingredients

  • 3 slices bacon,chopped
  • 1 medium onion,diced
  • 2 tablespoons butter, room temperature
  • 3 cloves garlic,chopped
  • 4 pounds sweet potates,peeled and cubed
  • 8 cups chicken or vegetable broth
  • 1/4 cup pickled jalapenos
  • 2 tablespoons jalapeno juice
  • 1 teaspoon cumin
  • 1/4 teaspoon baking soda
  • 1/2 cup fresh cilantro, chopped
  • 1 1/2 cups half and half
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper

How To Make jalapeno sweet potato soup

  • Step 1
    Heat butter in an 8 quart stockpot. Add bacon and onion and cook until bacon crisp. Add garlic and saute for 2 minutes.
  • Step 2
    Add sweet potatoes, broth, jalapenos, juice and cumin. Cover and cook until potatoes are tender.
  • Step 3
    When potatoes are done, add soda, cilantro and half and half. Mash potatoes with a potato masher or use an immersion blender.
  • Step 4
    Stir well and taste for salt and pepper. Serve immediately.
