This is so good. My family from out of town always went to a local Italian place to get this soup. Now they ask me to make it for them when they visit. This is my recipe.

grated parmesan cheese
1/2 c
dry bread crumbs
1 small
onion, chopped
3/4 tsp
salt, divided
1-1/4 tsp
pepper, divided
1-1/4 tsp
garlic powder, divided
2 lb
ground beef
2 qt
chcken broth
1/3 c
chopped fresh sminach
1 tsp
onion powder
1 tsp
dried parsley flakes
1-1/4 c
cooked medium pasta shells or spirals

How to Make Italian Wedding Soup


  • 1In a large bowl, combine the egg, cheese, bread crumbs,onion
  • 21/4 teaspoon salt
  • 31/4 teaspoon pepper
  • 4Crumble beef over mixture and blend well
  • 5Shape into 1-inch balls
  • 6In a dutch oven, cook meatballs in small batches until no longer pink; drain
  • 7Add broth, spinach, onion powder, parsley and remainging salt, pepper and garlic powder
  • 8Bring to a boil.
  • 9Reduce heat; simmer uncoveed for 5 minutes
  • 10Stir in pasta; heat through until posta is tender.
  • 11Makes 3 quarts
