Ingredients
- 1 pound italian sausage
- 1-2 clove garlic, crushed or pressed
- 1 - onion, chopped
- 4 cups water
- 1 - pkg. chicken flavor ramen noodles
- 1 - can diced tomatoes(14-16 oz.)
- 1 - can tomato paste( 8 oz.)
- 1 cup finely diced carrots
- 1 cup shredded zucchini
- 1/2 cup chopped red or green pepper
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 2 tablespoons dried parsley
- - shaved or shredded parmesan cheese
How To Make italian sausage soup

Step 1Remove sausage from casings and crumble into pot, or slice in rounds and place in pot. Cook until almost done. Drain sausage. Add chopped onion and garlic to sausage and cook and stir until sausage is fully cooked and onion is translucent.

Step 2Add the water to the pot.Bring water to boil. Stir in contents of seasoning packet from ramen noodles. Set uncooked noodles aside.

Step 3Add remaining ingredients(all but the noodles) to the pot. Bring to boil, then reduce heat and simmer for about 30 minutes, until veggies reach desired tenderness. During last 3 minutes of cooking, add broken ramen noodles to pot and cook and stir until noodles are tender. Serve soup topped with shaved parmesan cheese.

Step 4TIP: If you wish to avoid the large amount of sodium in the seasoning packet of the ramen noodles, replace the water and seasoning packet with low sodium chicken broth.
