1Remove sausage from casings and crumble into pot, or slice in rounds and place in pot. Cook until almost done. Drain sausage. Add chopped onion and garlic to sausage and cook and stir until sausage is fully cooked and onion is translucent.
2Add the water to the pot.Bring water to boil. Stir in contents of seasoning packet from ramen noodles. Set uncooked noodles aside.
3Add remaining ingredients(all but the noodles) to the pot. Bring to boil, then reduce heat and simmer for about 30 minutes, until veggies reach desired tenderness. During last 3 minutes of cooking, add broken ramen noodles to pot and cook and stir until noodles are tender. Serve soup topped with shaved parmesan cheese.
4TIP: If you wish to avoid the large amount of sodium in the seasoning packet of the ramen noodles, replace the water and seasoning packet with low sodium chicken broth.
