Ingredients
- 1 pound italian sausage
- 1/2 teaspoon oregano
- 1/2 teaspoon thyme
- 3 - russet potatoes, scrubbed rinsed and dried
- 1 tablespoon minced garlic
- 1 - white onion, diced
- 48 ounces chicken broth
- 1 bunch kale, chopped (about 2 cups)
- 1 cup heavy cream
- 1/2-1 teaspoon salt
- 1/2-1 teaspoon pepper
- - parmigiano-reggiano, grated - for garnish
How To Make italian sausage and potato soup

Step 1Slice potatoes, about 1/4 - 1/2 inch thick. Then cut into wedges.

Step 2Slice Italian sausage and brown in skillet along with oregano and thyme for about 5 minutes. (I have a slow cooker that has a browning setting so I use that.) I remove the casing around each slice before the next step.

Step 3Add onions, broth, and potato slices. Cook on low for 7-8 hour, or on high 4 hours.

Step 4Add cream, stir to combine. Add chopped kale, cook 20 minutes. Add salt and pepper to taste. Ladle into bowls. Garnish with grated parm if desired.
