2 Tbspbutter, unsalted
2 Tbspolive oil
5 mediumsweet onions sliced(vidalia is best)
3/4 cmarsala wine
1/4 cdry sherry
4 cbeef stock
·pepper to taste
·4 to 6 slices of stale italian bread 3/4 inch thick
3/4 cshredded asiago cheese
How to Make Italian Onion Soup
- Heat the butter and olive oil in a medium size
stock pot over medium heat.Saute the onions,stirring
frequently until they become soft.Add the flour
and stir well.
- Add the Marsala and Sherry and simmer until the wine
reduces by half.Add the beef stock and simmer for

Top each bowl with a slice of bread and
sprinkle Asiago cheese.
