Ingredients

  • 2 tablespoons butter, unsalted
  • 2 tablespoons olive oil
  • 5 medium sweet onions sliced(vidalia is best)
  • 2 teaspoons flour
  • 3/4 cup marsala wine
  • 1/4 cup dry sherry
  • 4 cups beef stock
  • - pepper to taste
  • - 4 to 6 slices of stale italian bread 3/4 inch thick
  • 3/4 cup shredded asiago cheese

How To Make italian onion soup

  • Step 1
    Heat the butter and olive oil in a medium size stock pot over medium heat.Saute the onions,stirring frequently until they become soft.Add the flour and stir well.
  • Step 2
    Add the Marsala and Sherry and simmer until the wine reduces by half.Add the beef stock and simmer for 20 minutes.
  • Step 3
    Ladle the soup into individual bowls. Top each bowl with a slice of bread and sprinkle Asiago cheese.
