Ingredients

2 Tbsp
butter, unsalted
2 Tbsp
olive oil
5 medium
sweet onions sliced(vidalia is best)
2 tsp
flour
3/4 c
marsala wine
1/4 c
dry sherry
4 c
beef stock
pepper to taste
4 to 6 slices of stale italian bread 3/4 inch thick
3/4 c
shredded asiago cheese

How to Make Italian Onion Soup

Step-by-Step

  • 1Heat the butter and olive oil in a medium size
    stock pot over medium heat.Saute the onions,stirring
    frequently until they become soft.Add the flour
    and stir well.
  • 2Add the Marsala and Sherry and simmer until the wine
    reduces by half.Add the beef stock and simmer for
    20 minutes.
  • 3Ladle the soup into individual bowls.
    Top each bowl with a slice of bread and
    sprinkle Asiago cheese.
