Ingredients For italian onion soup

  • 2 Tbsp
    butter, unsalted
  • 2 Tbsp
    olive oil
  • 5 md
    sweet onions sliced(vidalia is best)
  • 2 tsp
    flour
  • 3/4 c
    marsala wine
  • 1/4 c
    dry sherry
  • 4 c
    beef stock
  • pepper to taste
  • 4 to 6 slices of stale italian bread 3/4 inch thick
  • 3/4 c
    shredded asiago cheese

How To Make italian onion soup

  • 1
    Heat the butter and olive oil in a medium size stock pot over medium heat.Saute the onions,stirring frequently until they become soft.Add the flour and stir well.

    Add the Marsala and Sherry and simmer until the wine reduces by half.Add the beef stock and simmer for 20 minutes.

    Ladle the soup into individual bowls. Top each bowl with a slice of bread and sprinkle Asiago cheese.
