This is my 1st recipe to post. I made this concoction from what I had on hand. I wrote it down just in case and very happy I did. I am always being asked for recipes and usually have to make it again just to get it right. Hope you enjoy... Lolly

Ingredients
- 1 pound italian style chicken sausage, sliced
- 1 - yellow onion, chopped
- 2 cloves garlic,minced
- 1 teaspoon olive oil, extra virgin
- 2 cups chicken stock made from chicken base
- 1 cup water
- 1 can navy beans, rinsed
- 1 can chopped tomatoes, undrained
- 1 cup elbow macaroni, uncooked
- 2 cups baby spinach leaves
- 1 cup mozzarella cheese, shredded
How To Make italian sausage soup

Step 1COOK sausage, onions and garlic in olive oil in large saucepan with lid,(need lid for last step),for 15 minutes stirring often.

Step 2ADD chicken broth, water, beans and tomatoes. Bring to a boil. Stir in pasta, cook 8 minutes or until pasta is done. Remove from heat.

Step 3STIR in spinach, cover. Let stand at least 5 minutes. Serve in flat round bowls and top with cheese. Serve with Hot Italian Bread and Butter.
