This is my 1st recipe to post. I made this concoction from what I had on hand. I wrote it down just in case and very happy I did. I am always being asked for recipes and usually have to make it again just to get it right. Hope you enjoy... Lolly

Ingredients

  • 1 pound italian style chicken sausage, sliced
  • 1 - yellow onion, chopped
  • 2 cloves garlic,minced
  • 1 teaspoon olive oil, extra virgin
  • 2 cups chicken stock made from chicken base
  • 1 cup water
  • 1 can navy beans, rinsed
  • 1 can chopped tomatoes, undrained
  • 1 cup elbow macaroni, uncooked
  • 2 cups baby spinach leaves
  • 1 cup mozzarella cheese, shredded

How To Make italian sausage soup

  • Step 1
    COOK sausage, onions and garlic in olive oil in large saucepan with lid,(need lid for last step),for 15 minutes stirring often.
  • Step 2
    ADD chicken broth, water, beans and tomatoes. Bring to a boil. Stir in pasta, cook 8 minutes or until pasta is done. Remove from heat.
  • Step 3
    STIR in spinach, cover. Let stand at least 5 minutes. Serve in flat round bowls and top with cheese. Serve with Hot Italian Bread and Butter.
