Ingredients
- 2 pounds lamb stew meat, 1 inch dice
- 1 3/4 pounds white potatoes cut into 1 inch pieces, peeled(optional)
- 3 large leeks, whites only, halved, washed and thinly sliced
- 3 large carrots, cut into 1 inch pieces, peeled(optional)
- 3 stalks celery, thinly sliced
- 14 ounces can reduced sodium chicken broth
- 2 teaspoons chopped fresh thyme
- 1 teaspoon salt
- 1 teaspoon freshly ground pepper
- 1/4 cup fresh parsley leaves chopped
- 1/2 cup frozen green peas

Step 1Combine all ingredients except parsley and peas in a 6 qt slow cooker. Put lid on an cook until fork tender, about 8 hours

Step 2Add peas, cook on high for 20 minutes
