Ingredients
- 2 pounds lamb or beef stew meat
- 1 cup frozen peas
- 1/4 cup olive oil
- 2 cups onions
- 2 tablespoons minced garlic
- 2-3 tablespoons tomato paste
- 2-3 cups guinness
- 2 cups each beef and chicken stock
- 2 teaspoons thyme, dried
- 2 pounds red potatoes
- 1 cup carrots
- 1 cup savory cabbage
- 1/4 cup flour
How To Make irish beef stew

Step 1Brown meat in a large pot with 2 tablespoons of olive oil. Cook for about 8 minutes. Remove from pot and set aside.

Step 2Add another 2 tablespoons of olive oil into pot add onions and sweat covered till soft. Stir in garlic and tomato paste. Cook for 2-3 minutes or until tomato paste darkens. Add flour and stir to coat cook for about a minute.

Step 3Add Guinness beer scraping any bits from the bottom of the pot. Add both chicken and beef stock, browned meat, and thyme. Reduce heat to low and let cook for about an hour.

Step 4Stir in potatoes and carrots and cook till tender about 20 minutes. Add peas and cabbage and cook till cabbage is tender.about 7 minutes. Serve in bread bowl.
