This is a very good and delicious soup that can help you get rid of leftovers. But can also be made with fresh ingredients. Whichever way you choose to make it is a very appetizing soup when properly made and is very helpful when one is not hungry but has to eat. The eggs and characteristic seasonings exist in all kinds of Hot and Sour Soups. As to the other things you can ad lib; they can be fish, shrimps, meat, bean curd, etc. Even the water itself can be replaced by chicken soup, chicken broth, meat soup, made from boiling meat bones, adding chicken bouillon etc.

Ingredients

  • 3 - eggs
  • 7 cups water or any soup
  • 1 teaspoon salt
  • 2 tablespoons soy sauce, dark
  • 2 tablespoons cornstarch
  • 3 tablespoons vinegar
  • 3/4 teaspoon black pepper
  • 3/4 pound any other ingredients, chopped in small pieces

How To Make hot and sour soup

  • Step 1
    Mix salt, soy sauce, and cornstarch with one cup cold water or soup.
  • Step 2
    Then add it to 6 cups boiling water or soup.
  • Step 3
    Keep it on low while doing the following:

    Beat 3 eggs and pour very slowly into the boiling soup. Keep stirring the soup while pouring the eggs.
  • Step 5
    Then add in the vinegar, pepper and other ingredients.Make sure that your meat slices were precooked before adding to the soup.
