Ingredients

  • 3.5 cups carrots, sliced
  • 1 cup chicken broth
  • 1/2 onion, chopped
  • 1/2 cup milk, 2%
  • 1/4 cup honey
  • nutmeg, ground

How To Make honey carrot soup

  • Step 1
    In large saucepan, combine carrots, chicken broth and onion.
  • Step 2
    Cover and simmer over medium heat for about 15 minutes, or until carrots are tender.
  • Step 3
    Transfer mixture to blender or food processor; blend until smooth.
  • Step 4
    Return to saucepan.
  • Step 5
    Add milk and honey; return to simmer.
  • Step 6
    Serve hot or chilled, sprinkled with nutmeg.
