I love a good tomato soup and wanted to make one that met the criteria for our family. I came up with this recipe and it was definitely a keeper according to the family. I hope those who try it will agree. :-)

Slow Cooker Crock Pot

Ingredients

2 bottle
organic strained tomatoes, 24 oz bottles
2 stalk(s)
organic celery, diced
2 medium
organic carrots, diced
1 c
diced onion
1 tsp
oregano
1 Tbsp
basil
1/2 tsp
powdered bay
4 c
chicken bone broth
6 Tbsp
kerry gold butter
1 tsp
himalayan salt or good sea salt
1/4 tsp
black pepper
2 Tbsp
dried coconut milk powder
1 c
grated parmesan cheese

How to Make Herbed Tomato Soup

Step-by-Step

  • 1Place first 8 ingredients in crock pot and cook on LOW for 7 hours. Veggies will be nice and tender
  • 2Add the butter, salt and pepper. Stir and then using an immersion blender puree the soup till smooth
  • 3Add the parmesan cheese and stir well.
  • 4Add the coconut milk powder and mix once more with the blender
  • 5Check your seasonings and serve.
