herbed tomato soup

I love a good tomato soup and wanted to make one that met the criteria for our family. I came up with this recipe and it was definitely a keeper according to the family. I hope those who try it will agree. :-)

Ingredients

  • 2 bottles organic strained tomatoes, 24 oz bottles
  • 2 stalks organic celery, diced
  • 2 medium organic carrots, diced
  • 1 cup diced onion
  • 1 teaspoon oregano
  • 1 tablespoon basil
  • 1/2 teaspoon powdered bay
  • 4 cups chicken bone broth
  • 6 tablespoons kerry gold butter
  • 1 teaspoon himalayan salt or good sea salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons dried coconut milk powder
  • 1 cup grated parmesan cheese

How To Make herbed tomato soup

  • Step 1
    Place first 8 ingredients in crock pot and cook on LOW for 7 hours. Veggies will be nice and tender
  • Step 2
    Add the butter, salt and pepper. Stir and then using an immersion blender puree the soup till smooth
  • Step 3
    Add the parmesan cheese and stir well.
  • Step 4
    Add the coconut milk powder and mix once more with the blender
  • Step 5
    Check your seasonings and serve.
