This one is my mother in law's recipe, and my hubby has always loved the soup when we eat out at Italian restaurants, so of course I had to have the recipe and she nicely shared...I altered it to help avoid too much sugar. My version in notes.

Ingredients
- 2 pounds hamburger
- 6 - 14 1/2 oz cans beef broth
- 2 - 28 oz cans diced tomatoes, undrained
- 2 - 26 oz jars spghetti sauce
- 3 large onions, chopped (she omits)
- 8 - celery ribs, diced
- 3 medium carrots, sliced
- 2 cups canned cannellini beans,rinsed and drained
- 3 tablespoons minced fresh oregano or 1 t dried
- 2 1/2 teaspoons pepper
- 2 cups canned kidney beans, rinsed and drained
- 1 1/2 teaspoons hot pepper sauce (she omits)
- 8 ounces uncooked medium pasta shells
- 5 teaspoons minced fresh parsley

Step 1In large stockpot cook beef over med heat until no longer pink, drain and rinse with hot water. Add broth, tomatoes, spaghetti sauce, onions, celery, carrots, beans, oregano, pepper and pepper sauce. Bring to boil. Reduce heat, simmer covered 30 min. Add pasta and parsley, simmer covered 10-14 min or until pasta is tender.

Step 2NOTES: my version to avoid spaghetti sauce... 48 oz beef broth plus 32 oz beef broth 5 cans Italian style petite diced tomatoes with basil, garlic and oregano (got at walmart), 14 1/2 ounces each 46 ounce tomato juice Two 15.5 ounce cannellini beans, rinsed and drained Two 15.5 ounce light red kidney beans, rinsed and drained 5 pounds hamburger 16 ounces small shells (walmart) 5 stalks celery 2 pound bag carrots 4 small/medium purple onions

Step 3Directions for my version: I cooked on low, uncovered, 2 1/2 hours, stirring occasionally. Then I put uncooked pasta in, covered the stockpot but not all the way so steam could escap, stirring a couple times. 30 minutes later, the pasta was done.
