    squash, cooked and mashed
  • 1 c
    hazelnuts, finely chopped
  • 1/2 c
    onion, finely chopped
  • 1 qt
    chicken broth
  • pinch
  • pinch
  • 2 Tbsp
  • 2 Tbsp

How to Make Hazelnut Squash Soup


  1. Combine squash, hazelnuts, onion and broth in saucepan.
  2. Bring to a boil; cover and simmer 30 minutes, stirring occasionally.
  3. Stir in salt to taste, pepper, butter and sherry.
  4. Garnish with roasted and sliced hazelnuts, if desired.
