Ingredients

  • 1.5 cups squash, cooked and mashed
  • 1 cup hazelnuts, finely chopped
  • 1/2 cup onion, finely chopped
  • 1 quart chicken broth
  • pinch salt
  • pinch pepper
  • 2 tablespoons butter
  • 2 tablespoons sherry

How To Make hazelnut squash soup

  • Step 1
    Combine squash, hazelnuts, onion and broth in saucepan.
  • Step 2
    Bring to a boil; cover and simmer 30 minutes, stirring occasionally.
  • Step 3
    Stir in salt to taste, pepper, butter and sherry.
  • Step 4
    Garnish with roasted and sliced hazelnuts, if desired.
