my gumbo I add seafood ,chicken,sauage and just a little okra...make it spicy!!!!!!! on a cold winter day and it will warm you up fast

Ingredients

  • 6 ounces already made roux in a jar(dark or light)
  • 4 gallons water
  • 1 - whole chicken cut up
  • 2 packages your favorite smoke sausage
  • 4 quarts med shrimp
  • 6 - crabs cut in half
  • 1 cup onion
  • 1 cup bell pepper
  • 2 bunches green onions
  • 2 cups celery
  • 3 tablespoons cajun seasoning
  • 2 - bay leaves
  • 4 cups okra(optional)
  • 3 tablespoons gumbo file

How To Make gumbo

  • Step 1
    boil water add roux,onions,bell peppers,celery, sausage,chicken,bay leaves,seasoning let cook on high 40 min til chicken is well done like falling off the bone then add shrimp and crabs cook 20 more min then add file and green onions and add red pepper for spice.
  • Step 2
    let set 20 min then serve over a bowl of rice .Some like to eat with a side of mustard potato salad.
