Ingredients

  • 1 package lentils
  • 1/2 stick butter
  • 2 large onions, finely chopped
  • 3 - celery stalks, chopped
  • 1 - potato, diced
  • 1 large carrot, finely chopped
  • 4 quarts chicken stock
  • pinch salt
  • pinch pepper

How To Make golden lentil soup

  • Step 1
    Soak the lentils in warm water for 2 hours.
  • Step 2
    Skin the lentils by gently rubbing them between your palms under slightly running water; the skins will rise to the top and can be removed with cupped hands.
  • Step 3
    Melt butter in a large kettle and add onion and celery.
  • Step 4
    When golden, add remaining ingredients, including the drained lentils.
  • Step 5
    Bring to a boil, then simmer for 1 hour.
  • Step 6
    Add salt and pepper.
