Ingredients
- 1 package lentils
- 1/2 stick butter
- 2 large onions, finely chopped
- 3 - celery stalks, chopped
- 1 - potato, diced
- 1 large carrot, finely chopped
- 4 quarts chicken stock
- pinch salt
- pinch pepper
How To Make golden lentil soup

Step 1Soak the lentils in warm water for 2 hours.

Step 2Skin the lentils by gently rubbing them between your palms under slightly running water; the skins will rise to the top and can be removed with cupped hands.

Step 3Melt butter in a large kettle and add onion and celery.

Step 4When golden, add remaining ingredients, including the drained lentils.

Step 5Bring to a boil, then simmer for 1 hour.

Step 6Add salt and pepper.
