French Onion Soup

4 largesweet onions

3 - 4 sprig(s)thyme, leaves

2bay leaves
-
2 clovegarlic
-
1 stickbutter
-
1 can(s)beef consomme
-
1 boxbeef broth
-
·gruyere cheese
-
·croutons (your preference)
How to Make French Onion Soup
- Melt butter in large pot; add thyme, garlic, bay leafs, onions and salt & peper. Sautee to caramalize the onions, about 30-45 minutes.
- Once onions are caramalized, remove bay leafs.
Add beef consomme, bring to a boil. Lower heat and simmer until beef consomme has reduced by half. - Sprinkle with flour and stir. Keep heat low and cook for 10 mins to cook out the flour flavor.
Add beef broth to desired consistancy; simmer for 10-15 minutes. - Once ready to serve, spoon soup into individual oven safe bowels. Add croutons and shredded gruyere cheese.
Heat broiler to high.
Place bowls on a cookie sheet lined with aluminum foil for easy clean up. Place under broiler for 3 minutes until gold and bubbly.
