It isn't the watery type of soup but a nice thick hardy one. Very easy to make and a taste to savor!

Ingredients

  • 1 1/2 pounds peeled onions
  • 3 ounces butter
  • 1 teaspoon fresh ground black pepper
  • 1 tablespoon spanish paprika
  • 2 - bay leaves
  • 1 1/2 tablespoons salt
  • 1/2 cup all purpose flour
  • 1 1/2 quarts beef broth (bouillon, home made or cubes

How To Make french onion soup

  • Step 1
    cut onions in half and slice with the grain 1/8 in thick. Melt butter and add sliced onions saute slowly for 20 minutes, stirring often.
  • Step 2
    Add paprika, bay leaves and flour mix well keeping flame low. Stir while cooking for 5 minutes.
  • Step 3
    gradually add the HOT beef broth while stirring with preferably a wooden spoon, simmer soup covered for 30 minutes. Taste soup and season as desired with salt.
  • Step 4
    serving suggestion....fill oven safe soup bowls or soup crocks with 8 oz soup, Top with french bread and place a slice of swiss cheese on bread and place under broiler till cheese is melted and golden brown
