eierstich - egg custard soup garnish
Another favorite from my German mother - Eierstich. She would put this into home-made chicken soup. In researching Pennsylvania Dutch cuisine, I found a recipe for "Egg Custard for Soup". Checked some German websites to see how this old-time recipe compared to modern ones and I found this super simple way of cooking the custard. Good old zip bags are good for so many things! This garnish is traditionally added to any type of clear soup.

Ingredients
- 2 - eggs
- 2 tablespoons milk
- - salt, to taste
- - paprika, to taste
- 1 tablespoon parsley, finely chopped
How To Make eierstich - egg custard soup garnish

Step 1Put all ingredients into a small bowl. Whisk ingredients together well. Pour into zip-style freezer bag. Seal.

Step 2Immerse bag into simmering water bath for about 20 minutes until mixture has formed a solid mass. Remove from bag and cut into bite-sized pieces. Add to soup.
