This soup can be eaten as soon as 2-3 hours or can simmer all day on low in the crock pot. So easy and so tasty. You'll never peel potatoes again!

Ingredients

  • 1 package shredded hashbrowns
  • 8 cups chicken broth
  • 1/2 package diced carrots, onions, celery, or do your own but why not make it easy!
  • 2 - bay leaves
  • dash to your liking salt and pepper, i also add grill seasoning for meat and thyme and tarragon
  • 2 packages 8 oz each, cream cheese
  • 1 package diced ham (or bacon)
  • 1 clove garlic

How To Make easy potato soup with ham and cheese.

  • Step 1
    Bring everything except cream cheese to a boil. Simmer 10 minutes. Add cream cheese. I transfer to crock pot and put on low. Add shredded cheese before serving. Great with some hot, crusty bread. So simple, yet so good.
